From Pond to Pack: How Makhana Is Actually Grown

Makhana comes from the seeds of the prickly water lily (Euryale ferox), grown in shallow ponds across Bihar -- India produces the vast majority of the world's makhana, and our farms are right in the middle of that belt.

The growing cycle

1. Seeds are sown into pond beds at the start of the season
2. The lotus plants grow through the monsoon months, with seed pods forming underwater
3. Farmers dive to hand-harvest the seed pods once they mature -- this is still largely manual work
4. The raw seeds are sun-dried, then roasted at high heat until they pop open into the familiar white puff
5. Each popped seed is hand-sorted by size and quality before packing
